About this wine
Grapes
The blend is led by Dolcetto d’Ovada and generally includes Merlot and Cabernet Sauvignon. Other varieties may be added depending on the vintage.
Vinification
The grapes are harvested by hand in the second half of September. Maceration on the skins lasts 45–60 days, with pumping over and punching down every four hours. Spontaneous fermentation takes place in oak barrels for 2–3 months without temperature control, followed by spontaneous malolactic fermentation. The wine is bottled without filtration.
Ageing
The wine ages for nine months in oak barrels and matures in bottle for at least a further nine months.
Tasting profile
A fairly powerful wine with a distinctive character, high acidity and moderate tannins. Red-fruit notes appear on both the nose and palate. It is complex without being complicated.
