History
Castel de Paolis was founded in 1985 at Grottaferrata. The estate developed a range of white, red and dessert wines from local and international grape varieties.
Terroir
The vineyards lie at about 250–270 m on volcanic soils rich in potassium and tuff.
Winemaking
Vines are trained by Guyot or spurred cordon according to variety.
White, red and dessert wines are fermented in temperature-controlled stainless steel or barrels according to the label.
