Vineyard and terroir
The Pecorino grows in vineyards with clay-limestone soils.
Vinification
The grapes are harvested by hand at optimal ripeness, then gently pressed and fermented at controlled temperatures.
Ageing
The wine matures briefly on its lees in stainless steel tanks. It is then filtered to remove sediment and bottled.
