About this wine
Vineyard and terroir
The grapes come from Castellani's organic vineyards in western Sicily, at 350 m above sea level. The vineyards meet all EU organic standards in Italy. Only organic growing methods are used, without synthetic fungicides, herbicides or fertilizers. The favourable climate and the team's experience in vineyard cultivation make this possible, and the approach helps maintain the natural balance of the environment.
Vinification
The grapes are harvested in the first weeks of September. After crushing they undergo maceration and cold fermentation. Fermentation takes place in stainless-steel tanks at a strictly controlled temperature, to preserve the wine's distinctive aromas and flavours.
Ageing
A short period of ageing in stainless-steel tanks is followed by further ageing in the bottle.
