About this wine
Vineyard and terroir
The fruit comes from organic vineyards in Sicily that comply with EU organic requirements in Italy.
Vinification
The wine has naturally low sulfite levels and is produced using traditional methods alongside modern equipment. The grapes are gently pressed, and the must is clarified before fermenting in stainless-steel tanks at a controlled 16 °C for 15 days.
Ageing
After fermentation, the wine matures at 17–18 °C until the desired maturity is reached.
Label / history
The Ziobaffa project originated in a collaboration with a group of creative people from California. Film director Jason Baffa was the first person involved, and the wines were named after him: “Zio Baffa” means “Uncle Baffa” in Italian.
