About this wine
Vineyard and terroir
The fruit comes from vineyards on the hillsides and mountain slopes of Trentino, at an altitude of 800 metres.
Vinification
The grapes are harvested by hand, destemmed and gently crushed. A brief cold maceration is followed by fermentation at a controlled temperature. After stabilization, secondary fermentation takes place in large tanks according to the Charmat method.
Ageing
The wine spends a short period stabilizing before undergoing lees ageing in large tanks.

Cavit was founded in 1950 as a community and corporate group created by Trentino winemakers to oversee and improve wine quality and protect their interests. Based in northeastern Italy, it supports nearly 4,500 small wineries. Its 7,000 ha of vineyards account for 65% of the wine produced in Trentino each year.
