About this wine
Vineyard and terroir
The grapes are grown in Roverè della Luna and Valle dei Laghi, in the mountainous region of Trentino. The soils are well drained and the climate is sub-Mediterranean, which allows the crop to ripen in ideal conditions.
Vinification
The grapes are pressed as whole bunches. The must is vinified without skin contact, so that the wine does not take on a pink colour. Fermentation takes place at 20 °C.
Ageing
The wine ages for 4 months in steel tanks, then is chilled and bottled.
Label / history
"Bottega Vinai" is a range available exclusively through restaurants and wine shops, presented as an overview of Trentino's wines. Cavit was founded in 1950 as a community and corporate group of Trentino winemakers, created to improve and simplify quality control in wine production. It is based in northeastern Italy and supports almost 4,500 small wineries. It produces 65% of the wine made in Trentino each year, and its vineyards cover 7,000 ha.
