About this wine
Vineyard and terroir
The fruit comes from a mountainous vineyard in the Adige River valley.
Vinification
The grapes are harvested in late September at full ripeness. Winemaker Anselmo Martini oversees fermentation in stainless-steel vats at 26–28 °C.
Ageing
The wine matures in stainless-steel tanks and oak barrels.
Label / history
Cavit was founded in 1950 as a cooperative group of Trentino winemakers. Based in northeastern Italy, it supports almost 4,500 small wineries. Its members’ combined vineyard holdings cover 7,000 hectares, and the group produces 65% of Trentino’s wine each year.
