About this wine

Vineyard and terroir

The Merlot grows in mineral-rich clay soils in vineyards of the Trevenezie area, which covers Friuli-Venezia Giulia and Veneto as well as the province of Trentino in Trentino-Alto Adige. The climate is temperate, with low rainfall and moderate humidity.

Vinification

The grapes are harvested in late September, at full ripeness. Anselmo Martini oversees the vinification. Fermentation takes place in stainless steel vats at 26–28 °C. The wine is then racked off its lees.

Ageing

The wine ages in stainless steel tanks and oak barrels.

Label / history

Cavit was founded in 1950 as a cooperative group by Trentino winemakers who wanted stronger and simpler quality control. Based in northeastern Italy, it supports nearly 4,500 small wineries. It produces 65% of all the wine made annually in Trentino, and its combined vineyard holdings cover 7,000 ha.
