About this wine
Vineyard and terroir
The vineyards lie mainly on clay soils with some limestone, which contribute to the wine's clean, precise style. The harvest date is chosen according to the ripeness of the grapes, to preserve balance and freshness.
Vinification
The grapes are carefully sorted, destemmed and gently crushed, then cooled to 8 °C. Cold maceration lasts 4–5 hours at the same temperature and takes place without exposure to oxygen; this is when the wine takes on its copper-pink colour. Fermentation takes place in stainless steel tanks at 18 °C.
Ageing
Before bottling, the wine spends a short time in steel tanks to retain its freshness, clarity and bright fruit character.
Tasting profile
Light, fresh and approachable, with a clean, precise style and a bright fruit character. The colour is copper-pink.
Label / history
Cavit has been in operation since 1950. It is a corporate group founded by winemakers from Trentino to improve control over wine quality and simplify the process. Based in northeastern Italy, it supports nearly 4,500 small wineries. It produces 65% of all the wine made in Trentino each year, and its vineyards cover 7,000 hectares in total.
