About this wine
Grapes
Fiano is supplemented by a small proportion of Manzoni Bianco.
Vinification
The grapes are harvested at night before sunrise in the second half of August, while the cool air helps prevent spontaneous fermentation. They are gently pressed and transferred to stainless-steel tanks, where fermentation takes place with added yeast at a controlled 17–18 °C.
