About this wine
Vineyard and terroir
The grapes grow in Valle del Belice in southwestern Sicily, at elevations of 100–600 m. The soils are mainly chalky, and the vineyards are farmed sustainably.
Vinification
The grapes are harvested by hand in mid-September and placed in 10–15 kg crates. Processing is carried out with complete protection from oxygen, followed by gentle pressing to preserve the must’s aroma and acidity. The must is clarified by static settling at 12 °C for 24 hours, then fermented under strict temperature control.
Ageing
The wine rests in stainless-steel tanks for four months with frequent bâtonnage, followed by three months in bottle.

Annual production is approximately 20,000 bottles.
