About this wine
Vineyard and terroir
The white grapes are selected by hand from family vineyards in the lower part of Salarco. The vines stand at 300–350 metres above sea level on Pliocene-origin clay and sand, with south-eastern exposure. They are trained on a vertical trellis with spur-pruned cordons at a density of 4,000 vines per hectare.
Grapes
50% Malvasia del Chianti and 50% Trebbiano Toscano.
Vinification
After destemming, the free-run must is separated from the skins, inoculated with selected yeasts and fermented in steel vats for about 12 days at 26–28°C.
Ageing
The detailed production description gives 4–6 months in 20–25 hl steel vats, followed by 2–3 months in bottle before release. Another specification gives six months in wood and lists both 25 hl steel vats and 20 hl oak barrels.
Technical data
Annual production is approximately 5,000–6,000 bottles.
Tasting profile
A fresh, fragrant white intended for warm-weather drinking.
Serving and pairing
