About this wine
Vineyard and terroir
The vines are 20 years old on average and grow in a vineyard of around 1.5 ha. The soils are clay, dominated by calcareous marl. Planting density is 5,000 vines per hectare, with an average yield of 35 hl. The vineyards have been farmed exclusively according to biodynamic methods since the Calafata cooperative was founded and are certified by ICEA.
Vinification
The grapes are destemmed and crushed, then fermented spontaneously in stainless-steel vats.
Ageing
The wine rests in stainless-steel and concrete vats for around two years.
Tasting profile
Crisp and fresh, with Sangiovese's wild tannic texture in its youth.
Label / history
Production is limited to around 1,000 bottles each year.
