About this wine
Vineyard and terroir
The fruit comes from certified organic vineyards with predominantly clay, limestone and slate soils, which impart distinctive mineral notes.
Vinification
The grapes are harvested by hand to allow careful selection, then gently crushed and cold-pressed at the winery. Following the Charmat method, secondary fermentation takes place in stainless-steel tanks, where the base wine remains for 2.5 months, rather than in bottle.
