About this wine
Vineyard and terroir
The fruit comes from the Vigneto del Torrone Bianco vineyard on the San Giacomo estate. The vines are 20 years old on average.
Vinification
The grapes are harvested by hand during the first ten days of September and destemmed. Cold skin maceration lasts two days at 5 °C. Fermentation then takes place at 26–28 °C with frequent pump-overs. Malolactic fermentation is carried out in oak barriques.
Ageing
After malolactic fermentation in barriques, the wine ages 12 months in large oak casks, followed by some additional time in bottle. It can be drunk now and has an ageing potential of 15 years.
Serving and pairing
Decanting for an hour before serving is recommended.
