About this wine
Vineyard and terroir
The grapes come from high-altitude vineyards on the slopes of the Etna volcano. The estate follows a minimal-intervention approach, avoiding aggressive farming practices in favour of natural viticultural methods. The wine is certified to SOStain and VIVA standards.
Vinification
The grapes are harvested by hand in the second half of October, when they reach optimal ripeness. After gentle pressing, the must ferments in stainless steel tanks at a controlled temperature. The winery is built into ancient lava rock, which keeps it consistently cool without artificial refrigeration and reduces its carbon footprint.
Ageing
The wine ages on fine lees in steel tanks for 4 months, preserving the purity of the grape variety, its freshness and the minerality of the volcanic terroir.
Tasting profile
Elegant and fresh, with a distinctive mineral structure that reflects Etna's volcanic terroir. The nose combines mineral and smoky notes, with white fruit and flint in the foreground and subtle hints of white pepper. The palate has bright acidity, pure fruit and characteristic mineral touches, leading to a long, fresh finish with a delicate salty note. With time in bottle, its minerality and aromatic complexity become more pronounced.
