About this wine
Vineyard and terroir
The fruit comes from the separate Filagnotti plot near Tassarolo in Piedmont. The vineyard has iron-rich clay soils and a south-western exposure, which allows the grapes to ripen fully. Noticeable differences between daytime and nighttime temperatures help preserve acidity and aromatic precision. The vines are farmed according to biodynamic principles, with limited intervention and attention to the natural balance between soil and vines.
Vinification
The grapes are harvested by hand at the end of September and fermented with native yeasts. Malolactic fermentation smooths and fills out the texture, softens the acidity and adds depth. The wine is neither filtered nor fined; it is made without added sulfites and clarified only through natural settling.
Ageing
The wine matures for 15 months in large acacia barrels. Acacia imparts no pronounced woody character, instead adding roundness and a hint of spice while preserving the fruit's purity and mineral character.
Tasting profile
Complex, deep and unusually expressive, with a silky, smooth texture and bright minerality. Richness is balanced by freshness, while the mineral profile recalls salt, iron and wet stone, giving an almost metallic impression. The wine is elegant and luxurious, combining finesse with richness. Its lively, evolving character opens with air.
Label / history
The label depicts Stefano Bellotti's dog. Bellotti was the winemaker behind Cascina degli Ulivi.
