About this wine
Vineyard and terroir
The Dolcetto is grown in the winery’s vineyards in Piedmont, where clay-limestone soils and iron-rich clays predominate. Organic practices are followed in the vineyard and cellar, with minimal intervention.
Vinification
The grapes are harvested by hand at optimal ripeness in mid-October and placed in 20 kg boxes. After gentle pressing, they macerate for four weeks. Alcoholic fermentation takes place at a controlled temperature, with pump-overs at least twice daily, followed by malolactic fermentation.
Ageing
The wine ages on its lees for 24 months in 25 and 50 hL oak casks, with selected yeasts added. It is bottled without filtration.
Tasting profile
Elegant overall. When young, it is fairly simple and wild; with age, it becomes more elegant and mature.
Serving and pairing
Allow the wine to breathe for 15–20 minutes before serving.
