Sauvignon from the 2021 harvest.
Ageing
Matured briefly in brand-new barriques. The bottles are sealed with composite DIAM corks.
Technical data
Only 1,111 bottles were produced.
Tasting profile
Lively, intense aromas combine bell pepper, sage and peach with warmer notes contributed by the toasted barriques. The flavour is similarly intense.
Serving and pairing
Serve at 12 °C. The aromatic intensity suits white meats and grilled or smoked fatty fish, particularly salmon, swordfish, smoked eel and trout.
Vintage notes
The 2021 edition explores Sauvignon given a short period in new barriques. It forms part of an annual project devoted to a different experimental wine at each harvest.
Label / history
The One Shot Project was created as an outlet for new ideas and side projects without being constrained by production targets or market requirements. Both the wine and label change with each yearly edition, and a different artist is commissioned for every collection. Swedish illustrator Mattias Adolfsson created the artwork for the 2021 label.
