Grapes
Ribolla Gialla.
Vinification
The grapes underwent three days of skin maceration, developing a discernible tannic character. Fermentation took place in a combination of new French and American oak barriques.
Ageing
The wine remained in the same new French and American oak barriques for 11 months. It was bottled with a composite DIAM closure. Production was limited to 2,222 bottles.
Tasting profile
Full-bodied, rich and rounded, with a distinctive tannin-shaped finish. The intense, enveloping bouquet combines ripe tropical fruit with lighter nuances of vanilla and white flowers.
Serving and pairing
Serve at 12 °C. A classic partner for seafood, especially monkfish and fuller-flavoured species such as swordfish. Its aromatic intensity also suits delicate white meats, including duck and chicken.
Label / history
One Shot is an annual experimental project devoted to a different wine concept at every harvest; each edition is conceived as a stand-alone release that will not be reproduced. The label also changes annually through collaboration with a different artist. Illustrator Redmer Hoekstra created the artwork for the 2022 edition.
