About this wine
Vineyard and terroir
The grapes are grown in the province of Trapani, in central and western Sicily. The vineyards lie at 100–250 m above sea level on mixed soils in which limestone predominates. The climate brings mild winters and hot, dry summers.
Vinification
The grapes are harvested in the second half of September and gently pressed. Cold maceration on the skins lasts no more than 12 hours. Alcoholic fermentation takes place at a controlled 17–18 °C, after which the wine is held at a regulated temperature until it clarifies naturally.
Ageing
The wine is bottled in February and rests for one month in a cool cellar.
