About this wine

Vineyard and terroir

Carricante grows in lava-derived volcanic soil on Mount Etna. Its volcanic origin is expressed through the wine’s pronounced mineral and savory character.

Vinification

The hand-picked grapes are carried to the winery in crates on small carts. After the crates are unloaded manually, the bunches are destemmed. The skins remain in contact with the juice for at least four hours, followed by gentle crushing. Static settling separates the must from the solids, and fermentation proceeds at a controlled temperature of 14–16 °C.

Ageing

The wine remains on its lees for at least three months, followed by at least one month of bottle ageing before release.

Technical data

The 2023 wine has 13% alcohol, total acidity of 6.3 g/L and pH 3.21. The available format is 75 cl.

Tasting profile

Pale straw yellow with distinct green highlights. The intense bouquet combines tropical fruit, white peach and Mediterranean scrub, while the broader aromatic profile includes peach, exotic fruit, iodine and occasional spice. The palate is balanced, fresh and savory, with firm structure, mineral character and a long, elegant finish.

Serving and pairing

Suited to seafood and Mediterranean first courses, as well as white meat, grilled vegetables and baked fish.

Vintage notes

Autumn and winter preceding the 2023 growing season brought little rainfall. A cool, continuously rainy spring lasted through June, followed by mild conditions from June into July. Summer began in early July, with temperatures rising steadily until harvest. Picking was later than in preceding years, on 15 October. Despite agronomic challenges, the fruit reached optimal technological and phenolic maturity, producing marked aromatic and palate complexity.
