About this wine
Vineyard and terroir
Grillo from western Sicily. The 2024 season brought a dry autumn and winter, a dry spring and a hot summer.
Grapes
100% Grillo.
Vinification
The grapes are destemmed on arrival and gently pressed in a soft press to obtain the free-run must. Fermentation takes place in stainless-steel tanks at a controlled 16–18°C.
Ageing
After fermentation, the wine remains on its fine lees for at least 3 months, followed by at least 1 month in bottle before release.
Technical data
2024 vintage. Alcohol 11% vol.; total acidity 5.8 g/L; pH 3.23. Bottle format: 75 cl. The first vintage was produced in 2018.
Tasting profile
Straw yellow with greenish reflections. Grapefruit and jasmine aromas mingle with tropical notes of mango and papaya. The palate is enveloping and direct, combining freshness and tanginess with suppleness and a long, persistent finish.
Serving and pairing
Serve at 8–10°C. Ideal with fish soup, shellfish and raw seafood. Intended for enjoyment within 2 years.

The 2024 harvest extended from mid-August through the end of September.
