About this wine
Vineyard and terroir
The fruit is grown in Salento.
Vinification
The grapes are hand-harvested on sunny days in September at full ripeness and high sugar levels. At the winery, they are destemmed and pressed. The must macerates on the skins for 14 days at a controlled temperature of 25–27 °C.
Ageing
The wine matures for 6–9 months in small barrels made from French oak from Allier and Tronçais, followed by another four months in bottle.
