About this wine
Vineyard and terroir
The certified-organic vineyards are located in Valle del Belice at 300 metres above sea level. They face north-east and are planted on deep alluvial soils.
Vinification
After harvest, the grapes undergo cryomaceration for about 8 hours to extract colour from the skins. Fermentation lasts 13–15 days at 10–12 °C, preserving the grape’s flavour and natural aromatic character.
