About this wine
Vineyard and terroir
Selected Catarratto grapes come from Bellusa, in Salemi, at around 160 m above sea level. The vineyards have a favourable aspect and predominantly limestone soils.
Vinification
The grapes are usually harvested by hand in the last third of September. Fermentation uses natural yeasts and is followed by 2 days of maceration. The juice is then gently pressed away from the skins and pulp.
Ageing
The wine ages for 7 months in stainless steel tanks.
Tasting profile
Delicate floral aroma with notes of ripe fruit.
Serving and pairing
Suited to aperitifs, and to appetizers and vegetable dishes.
Label / history
"Guanciabianca" is the feminine counterpart of the Guancianera story from the same estate. It is dedicated to a tiny Sicilian "acidduzza" (bird) in love. According to the story, after Guancianera kissed Guanciabianca for the first time, a small white mark appeared on her cheek, and the two "acidduzzi" became one.
