About this wine
Vineyard and terroir
The vineyards are in San Pietro in Cariano, on soils rich in volcanic rock, limestone and gravel.
Vinification
The grapes are harvested by hand in early October, after the onset of slight overripening. They dry for about two weeks before destemming and pressing. Selected yeasts are added to the must, which ferments at a controlled temperature of 26 °C.
Ageing
Half of the wine matures in barriques and half in stainless-steel tanks, followed by further ageing in bottle in the winery’s cellars.
