About this wine
Vineyard and terroir
The grapes grow in vineyards in San Pietro, Cariano, on volcanic and limestone soils.
Vinification
The bunches are harvested by hand in early October, after being allowed to dry slightly before picking. They are destemmed and pressed immediately. Added yeast initiates fermentation at a controlled temperature of 28 °C. During fermentation, the must is pumped with special pumps to separate the wine from the skins, contributing freshness to the finished wine.
Ageing
The wine ages in Slavonian oak barrels, followed by further ageing in bottle.
