About this wine
Vineyard and terroir
The fruit comes from Castelcerino, the vineyard surrounding Filippi’s estate in his home village of the same name. Facing southeast at 290–400 m above sea level, it is the highest vineyard site in Soave. The soils are predominantly basaltic and volcanic, and the vines are 40–70 years old.
Vinification
The grapes are harvested by hand at optimal ripeness and gently pressed. The must ferments with wild yeasts in 100 L stainless-steel tanks at a controlled temperature. Malolactic fermentation may occur. After settling at low temperatures, the wine is bottled without filtration.
Ageing
The wine spends an extended period on its lees, with bâtonnage during the winter months.
