About this wine
Vineyard and terroir
The vineyards are situated on the northeastern side of Etna at 720 metres above sea level. The vines grow in well-drained sandy-clay volcanic soils, at a density of 4,000–4,500 vines per hectare. Yields do not exceed 7,200 kg per hectare.
Vinification
The grapes are harvested by hand in the second week of October. Alcoholic fermentation takes place in stainless-steel tanks for 15 days at a controlled temperature of 16–18 °C.
Ageing
The wine matures for three months with daily lees stirring, followed by two months in bottle.
