About this wine
Vinification
The grapes are harvested by hand and undergo two selections, first in the vineyard and again at the winery. Fermentation takes place with wild yeasts in conical stainless-steel tanks to preserve freshness.
Ageing
The wine rests for one year in previously used barrels, which add structure to its complexity.
Serving and pairing
Pairs with rustic Italian dishes, particularly Florentine steak and ribollita.
