About this wine
Vineyard and terroir
The fruit is grown in the commune of Roverè della Luna at 200–300 m above sea level. The vineyards have a mild climate influenced by nearby Lake Garda, generous sunshine, and alluvial and sandy soils.
Vinification
The grapes are harvested at optimal ripeness and pressed immediately upon arrival at the winery to limit oxidation. The wine undergoes two days of skin maceration—the source notes that at least 12 hours of skin contact is what produces the copper hue—followed by temperature-controlled fermentation in stainless-steel tanks. The subsequent process follows the classic method for white wine.
Ageing
The wine rests on its lees in stainless-steel tanks.
Serving and pairing
Pair with mild cheeses, omelettes, pancakes filled with cottage cheese or chicken, boiled poultry, or Caesar salad.
Label / history
In official contracts, ramato, meaning “copper,” is used for Pinot Grigio grapes. The name refers to the skin-contact technique that gives the wine its copper colour. Despite that colour, Ramato is considered a white wine.
