About this wine
Vineyard and terroir
The fruit comes from vineyards in the Cembra Valley and on the hills of Lavis, at elevations of 300–500 metres. The soils range from deep, well-structured sites rich in dolomitic material to shallower, freer-draining sites with abundant white and grey limestone and porphyritic deposits.
Vinification
The grapes are harvested at optimal ripeness, gently pressed and subjected to cold static settling. Fermentation proceeds in steel tanks for 10 days at a controlled 16 °C using selected yeasts. The wine then remains on its lees until spring. After the dosage liqueur is added, it is bottled.
Ageing
The wine ages in bottle for at least three years before release.

Label / history
The label uses “Trentodoc,” a name combining Trento with the abbreviation DOC. The text identifies it as the first officially recognised Italian brand of its kind after Champagne and states that the designation guarantees compliance with the rules governing traditional-method sparkling-wine production.
