About this wine
Vineyard and terroir
The Catarratto comes from two sites in Sicily. At Partanna, 250 m above sea level, a 0.5 ha vineyard planted in 1971 grows on clay soils. At Salaparuta, 200 m above sea level, a 1.5 ha vineyard planted in 2013 grows on sandy clay soils. Yields do not exceed 70 quintals/ha.
Vinification
The grapes are picked in the last week of September. Fermentation is spontaneous, in steel tanks without temperature control. 20% of the harvest undergoes 10 days of maceration. Sulfur is added in limited amounts, never exceeding 50 mg/L.
Ageing
The wine is aged in stainless steel tanks until April.
Tasting profile
An elegant white. The maceration gives the bouquet a special charm, with notes of orange blossom.
