About this wine
Vineyard and terroir
The Syrah is grown biodynamically in Salaparuta, in southwestern Sicily. The vines were planted in 1998 on southwest-facing slopes at 250 metres above sea level, in sandy clay soils. Yields do not exceed 70 centners per hectare.
Vinification
The grapes are picked in the last week of August. Fermentation is spontaneous, in steel tanks without temperature control, followed by 10 days of skin contact. Sulfur is added only in limited amounts, no more than 25 mg/l.
Ageing
The wine stays in stainless steel vats until April.
