Vineyard and terroir
San Lorenzo is an Etna Rosso D.O.C. selected from 8 ha in the San Lorenzo cru at Randazzo. The vines range from 70 to more than 100 years old and grow between 750 and 780 m above sea level on Etna's northern slopes. The soil is volcanic, sandy and rich in minerals. Planting density is 4,500 vines per hectare, with alberello and modified alberello vines trained on trellises. Yield is 30 q/ha, and the grapes are organically grown.
Grapes
Nerello Mascalese with small proportions of Nerello Cappuccio.
Vinification
Harvesting is manual and takes place in the final week of October. Fermentation occurs spontaneously through yeasts naturally present on the grapes at 28–30°C. Maceration on the skins lasts 15 days. Malolactic fermentation takes place spontaneously in spring.
Ageing
The wine matures for 18 months in second-use 2,600 L oak casks and then spends at least six months in bottle.

Tasting profile
Deep ruby red. The multifaceted bouquet brings together blackberry, plum and redcurrant with mineral and spicy nuances of aromatic herbs, mint and leather. The palate is enveloping, with an exceptionally dense yet fine tannic weave.
