About this wine
Vineyard and terroir
The grapes come from several estate-owned, organically farmed hillside vineyards in the municipality of Soave. The silty, sandy soils are rich in active limestone and lie over volcanic rock. The vines are 10–40 years old.
Vinification
The bunches are harvested by hand and selected in the vineyard, then sorted again before drying in 5 kg wooden crates until December. After destemming and pressing, the must is gently warmed and fermented for 20 days at 15–20 °C in 25 hl stainless-steel tanks.
Ageing
The 2020 vintage matured for more than 18 months in stainless-steel vats and 5 hl tonneaux. It was bottled on 13 December 2022.
