About this wine
Vineyard and terroir
The grapes grow in the estate’s vineyards in Puglia. Silica- and limestone-rich soils extend to a depth of 6 m, above a further 2 m of clay-limestone soil rich in humus. The vineyards are cultivated according to ICEA standards for synergistic and organic agriculture, with 4,455 vines per hectare. The vines average 22 years of age, and yields do not exceed 6 tonnes per hectare.
Vinification
The grapes are harvested by hand during the first ten days of October, then destemmed and gently pressed. The must ferments spontaneously with natural yeasts. Skin contact lasts 20–30 days, followed by gentle pressing. Malolactic fermentation takes place in stainless-steel tanks. The wine is bottled without filtration.
Ageing
The wine matures in stainless-steel tanks for 24 months, followed by 18 months in a large wooden cask and six months in bottle before release.
