About this wine
Vineyard and terroir
The Primitivo grows in the estate’s vineyards in Salento. Silica- and limestone-rich soils extend to a depth of 6 metres, above a further 2 metres of clay-limestone soil rich in humus. The clay retains moisture, while the stones aid drainage. The vineyards are farmed according to ICEA criteria for synergistic and organic agriculture. Planting density is 4,545 vines per hectare; the vines average around 20 years of age, and yields do not exceed 60 quintals per hectare.
Vinification
The grapes are harvested by hand during the first ten days of September, then destemmed and mechanically crushed. Fermentation begins spontaneously with natural yeasts. Maceration lasts 20–30 days and is followed by gentle pressing.
Ageing
Malolactic fermentation and the first 18 months of ageing take place in stainless-steel tanks. The wine then ages for a further 18 months in large wooden barrels. It is bottled without filtration or fining and with minimal added sulfur, followed by at least six months in the winery’s cellars.
