About this wine
Vineyard and terroir
The five varieties are grown in Puglia in vineyards farmed to ICEA standards for synergistic and organic agriculture. The vines are 22 years old on average. Silica- and limestone-rich soils extend to a depth of 6 m, above a further 2 m of clay-limestone rich in humus. The clay retains moisture, while the stones provide drainage.
Vinification
The grapes are harvested by hand during the first ten days of October. After destemming and gentle crushing, spontaneous fermentation begins in stainless-steel tanks. The wine then undergoes 25–30 days of skin maceration before gentle pressing.
Ageing
The wine matures for 18 months in stainless-steel tanks with frequent bâtonnage.
Tasting profile
Simple and straightforward, with a pronounced fruit character.
