About this wine
Vineyard and terroir
The Madonnina vineyard has limestone and clay soils, which drain well and help give bright aromas with a lingering mineral note. The vines are grown using organic and biodynamic methods, to express the variety as naturally as possible.
Vinification
The grapes are picked by hand around mid-September, carefully selected and destemmed. After gentle pressing, the must is settled and transferred to stainless steel tanks to prevent microbiological changes that could affect quality. Alcoholic fermentation lasts 15–20 days at a controlled 18 °C.
Ageing
The wine rests on its lees for around six months, which develops warmer, deeper aromas and a rounder texture.

Delicate, refined and elegant, in the tradition of bringing out the distinctive, gently savory character of Cortese. Bright aromas with a lingering mineral note; warmer, deeper aromas and a rounder texture after time on the lees.
