About this wine
Vineyard and terroir
The estate vineyards lie on a southeast-facing hillside at 450 m above sea level in Panzano in Chianti. Their soils combine limestone, sand, volcanic stone, schist and clay. The vineyards were certified organic and trained to cordone speronato when the 2018 technical information was prepared.
Grapes
Blend proportions vary by vintage. The latest published vintage, 2022, combines Sangiovese and Merlot with a small portion of Cabernet Sauvignon; exact percentages are not specified. The wine is conceived in the style of a young Chianti.
Vinification
For 2018, the varieties were harvested separately: Merlot on 20–22 September, Sangiovese from 24 September to 2 October and Cabernet Sauvignon on 3 October. Slow fermentation took place at 28–29°C with daily pump-overs. The wine remained on the skins until pressing at the end of October and subsequently completed malolactic fermentation.
Ageing
The principal description specifies four to six months in French oak. For the 2018 vintage, approximately half of the wine matured for six to eight months in used French oak tonneaux of 500 and 700 litres, with the other half retained in stainless steel. The 2022 release is likewise described as receiving only a short period in used oak tonneaux.
Technical data
The 2018 contained 14% alcohol and had a production of 7,000 bottles.
Tasting profile
The 2022 is fresh, flavourful and lightly structured, with an accessible, easy-drinking character. Fresh acidity defines the broader style.
Serving and pairing
Serve at 18°C. Suitable for everyday dishes including pasta, pizza and meat.
Vintage notes
The 2018 season began with a relatively warm winter, followed by snow and severe ice at the end of February. The vines escaped the worst damage, and warm spring weather encouraged growth. May and early June were cool and wet, after which summer became warm and sunny, with occasional rainfall. Harvest began in mid-September.
Label / history
The name refers to the rabbits and hares that roam through the vineyards.
