About this wine

Vineyard and terroir

The organically grown fruit comes from the eastern hills of Friuli. The area has a continental climate and mineral-rich soils formed from Flysch rock, locally called “Ponca” in Friulano.

Vinification

The grapes are hand-harvested at optimal ripeness, usually during the first week of September. They are sorted on a sorting table, destemmed and macerated on their skins overnight at 5 °C. After gentle pressing, the must settles for 24 hours. Fermentation with selected yeasts lasts 15 days in stainless-steel tanks at a controlled 18 °C. Malolactic fermentation is prevented to retain acidity.

Ageing

The wine rests on its fine lees for eight months, with weekly bâtonnage.

Tasting profile

Fresh, fruity and floral, with a rich flavour and refreshing acidity.

Serving and pairing

Pair with fish and seafood.

Label / history

“Ramato” means “copper-coloured” in Italian, referring to the hue obtained through overnight skin contact. The 2021 vintage is certified Vino Biologico IT810-009.
