About this wine
Grapes
Pinot Nero.
Vinification
The wine undergoes a 12-day maceration in truncated cone-shaped French oak vats. During the first three days, manual cap plunging alternates with pump-overs. After drawing off, the marc is pressed traditionally. The wine then rests in vat for one day so that the largest particles can settle before it is transferred to new barriques.
Malolactic fermentation takes place in barriques.
Ageing
The wine remains in new barriques for a total of 18 months. It is then blended and bottled immediately, followed by 16 months of bottle ageing before release.
Serving and pairing
Serve at 18°C.
