About this wine
Vineyard and terroir
The Fiano grows in the fertile, rich soils of the Salento peninsula, an area with ancient winemaking traditions. The warm Mediterranean climate lets the grape ripen slowly and evenly, bringing out its distinctive character. The vines are very young, 5 years old.
Vinification
The grapes are picked by hand, usually between late August and the first week of September. At the winery they undergo cold maceration with dry ice, then crushing and gentle pressing. The must settles for 24 hours and is fermented in stainless-steel tanks at a controlled 14 °C.
Ageing
The wine rests on fine lees for 2 months with regular bâtonnage. After bottling it matures a further 2 months in the winery's cellars.
Tasting profile
Bright, young and lively. The colour is an intense straw yellow. The structure is rich, with fruity and floral notes on both nose and palate. The style is straightforward and authentic, reflecting the warmth and sunshine of the region.
Label / history
Made by Leone de Castris, a winery in Apulia founded in 1665. It is now a large producer with high production volume, making white, red, rosé, dessert and sparkling wines.
