About this wine
Vineyard and terroir
The grapes come from the fertile, rich soils of the Salento peninsula, an area with a long winemaking tradition. The vines have an average age of 10 years and grow in a warm Mediterranean climate on clay and silt soils.
Grapes
Chardonnay is blended with Malvasia Bianca di Lecce.
Vinification
Harvest is by hand, usually in the first ten days of August for Chardonnay and the first ten days of September for Malvasia Bianca di Lecce. At the winery the grapes undergo a short maceration, followed by gentle pressing. The must ferments in steel tanks at a controlled 14 °C.
Ageing
The wine ages on the fine lees for 2–3 months. After bottling it rests a further month in the winery's cellars to develop its aroma and flavour.
Tasting profile
Light, fresh and dry, with an inviting fruity and floral aroma. The taste is soft and beautifully balanced.
