About this wine
Vineyard and terroir
The vineyards lie in Valle d'Aosta at 600–850 m above sea level. The "Frissonnière" vineyard in Saint-Christophe and the "Les Crêtes" vineyard in Aymavilles together cover 4 ha. Soils are loose, sandy moraine, and the exposure is north-east. The vines are about 17 years old on average. The mountain sites give the wine its distinctive character and noticeable freshness.
Vinification
The grapes are harvested by hand at the end of September. After gentle pressing, the wine ferments for 12 days in stainless steel tanks at a controlled temperature of about 18 °C.
Ageing
The wine ages on the lees for 6 months, with continuous bâtonnage.
