About this wine

Vineyard and terroir

The grapes come from vineyards along the Tiber River in Umbria, on clay and sandy soils.

Vinification

Harvest takes place when the grapes reach optimal ripeness, usually in the second half of September. Fermentation is in temperature-controlled stainless steel tanks at 26 °C, followed by post-fermentation maceration. The whole process lasts 7–8 days.

Ageing

After malolactic fermentation is complete, the wine is aged in steel tanks and in bottle.

Label / history

The name "Cadetto" presents the wine as the younger brother, the cadet, of "Rubesco". The label shows a detail from an old compass found in an antique captain's logbook.
