About this wine
Vinification
The grapes are harvested and selected by hand, then crushed and destemmed. Alcoholic fermentation starts spontaneously through contact between the native yeasts and the grape skins. It takes place in temperature-controlled stainless steel tanks at 28–29 °C and lasts 14 days. After fermentation the wine is racked and cold-settled. It is stabilised at low temperatures without fining agents, then filtered through 0.45-micron stainless steel cartridges.
Ageing
The wine ages in two stages: first in steel tanks, then in bottle before release.
